Ellie's creations are an ode to her family focused upbringing centred around food, cooking and gathering around a dining table, as she invites people to challenge their tastebuds with her layered combination of "sweet and salty".
"I loved being able to share my ideas and then see these creations transformed into gelato - its ok if some of my flavours scare people - but I hope they go out of their comfort zone to taste it."
